The easiest and tastiest cake ever!

Earlier this month, we had our fun neighbors, Kirk, Melissa and Thomas,  over for a late Sunday lunch.

After we ate, I brought out a cake I was so excited to try. Melissa saw it, and asked, “Is that gooey butter cake?”

I laughed in surprise. I had never had it before, but she apparently makes it all the time, and with different, tasty variations.

I thought it was funny that my “new” cake was one of her favorites. It didn’t change the fact that the cake was fabulous.

I let a drawn out “mmmmmm” during my first bite. I couldn’t stop eating it, and neither could Jad, who kept moving closer to the pan.

This is literally perfection in a cake,  but Melissa told me it is fun to change the cake mix flavor, and play with extracts and toppings.

Here is the recipe for Mom’s Gooey Butter Cake:

4 large eggs
1 stick butter (I used unsalted)
1 box yellow cake mix 
8 oz cream cheese, room temperature
2 c or 1 box powdered sugar
Directions
1 Preheat oven to 350F.
2 Mix together dry cake mix, butter, and 2 eggs and press into a greased 9″ x 13″ cake pan, pushing the sides up slightly to hold the filling.
(This was the hardest part for me. It helps to put wax paper over it and smush it with your fingers.)
3 For filling: Mix cream cheese, remaining 2 eggs, and powdered sugar, till smooth.
4 Pour filling into crust and bake for 35 minutes. (This is the first cake I have ever made where it was done exactly at the right time.)
5 Let cool. Serve at room temperature. Store in refrigerator.

I am so glad Kirk, Melissa, and Thomas came over. We not only had a wonderful cake,  but Kirk gave me the inspiration to expand my blog into my own site. He has been a wonderful help in its creation. I appreciate my neighbors’ friendship so much!
