We got snow last Saturday, so of course Jad had to make pancakes. 😉 Instead of making the usual pancakes filled with chocolate chips, he went to his Arabic roots and tried something different. Imagine an on-the-crispy-side cinnamon/sugar pancake. That’s basically what they tasted like. They were addicting for sure. Here is the recipe to the best of Jad’s recollection:
Pancakes

One cup sugar

Four cups pancake mix

Teaspoon of cinnamon

One egg
-
Water
Directions
1. Sift together the sugar, pancake mix, and cinnamon.
2. Add one egg and enough water to make good a consistency (not too thick or runny).
3. Mix well.
4. Scoop batter onto a well-buttered griddle and cook until the pancakes start to get crispy.
Syrup

Cup sugar
-
Cup water
Directions
1. Mix sugar and water together and bring to boil.
2. Remove from heat, add a drop or so of lemon juice, and mix together.
Topping
-
Cup of powdered sugar
-
1 tbsp cinnamon
Directions
1. Mix ingredients together.
2. Sift over pancakes as a topping along with the syrup.
