My husband is a terrific cook. He uses spices expertly to make anything that would usually be boring into a masterpiece. Salad is no exception. His chicken salad is to die for. Here is the recipe:
Chicken Ingredients and Directions:
1 Chicken breast, cut into pieces
1 tbsp any vinegar
1/2 tbsp salt
Juice of one lemon
2 cloves of garlic, minced
1/4 tsp each of black paper, paprika, garlic powder, onion powder, dried thyme, dried oregano, dried basil, cayenne pepper (mix together)
Salt to taste
2-3 tbsp light olive oil
- Place chicken in a shallow bowl of water. Add vinegar and salt. Soak chicken for 15 minutes. Rinse chicken and dry with a paper towel.
- Preheat the oven to 350.
- Coat the chicken breasts with olive oil on both sides (about 1 tbsp total)
- Sprinkle both sides evenly with spice mixture and salt.
- Place the chicken in a hot frying pan, and cook for 1 minute. Turn, and cook 1 minute on other side.
- Place the breasts on a prepared baking sheet, sprayed with oil.
- Bake in the preheated oven until no longer pink in the center (about 5 minutes)
- Mix the garlic and lemon juice together.
- After removing from the oven, pour the garlic/lemon mixture over the chicken.
Salad Ingredients and Directions:
Romaine lettuce
Baby Spinach (if desired)
Red onion (feel free to sauté if you like)
Pita bread cut in squares
- Clean and chop the romaine, spinach and onion.
- Fry the pita squares on a lightly greased pan, turning, until crispy.
Dressing Ingredients and Directions:
Juice of one lemon
1 tbsp extra virgin olive oil
Paprika and salt to taste
- Shake together in a jar for about 30 seconds.
To Assemble:
Place the chicken on the salad. Then, add the pita and dressing. Garnish with Parmesan cheese and sweet balsamic glaze.
